The resort town of Hua Hin is abundant in fresh seafood especially in the vicinity of Hua Hin pier. Most hotels serve Thai and Western cuisine including barbecue. Hua Hin Night Market on Decha Nuchit Road offers a wide array of foods: Thai food, seafood,Thai desserts, etc. The adjacent Chatchai Market is an old famous daytime market built in the reign of King Rama VII (1925-1935) which now becomes a centre of souvenirs, and fresh & dried food.
For international food lovers, they should visit Damnoen Kasem or Naret Damri or Decha Nuchit roads where a wide selection of Danish, Italian, and German delicacies are served in many restaurants. Recommended Restaurants

Sweden House, a little off the beaten track at 48 Dechanuchit Road but well worth the 5-minute walk (and near lots of silk and silver shops). Mats fixes up great meatballs and schnitzel and his pork cutlets are huge.

Fresh Restaurant at the front of the Fresh Inn Hotel has Thai and international dishes. Located opposite the Melia, you can spend your time watching people on the street from a nice restaurant. Try their Kung Noh Mai Farang (King Prawns with green asparagus). For dessert try their fried bananas.

The Taj Mahal, near the Chinese temple at the north end of the Melia, has dishes from the sub-continent.

La Villa Restaurant on Poonsuk Rd opposite the City Beach Hotel offers "the true taste of Italian food" and is known for their green lasagna. Tel: (032) 513-535.

The Piaf Restaurant serves German and Austrian food at moderate prices. This is a new place but business looks good. 23 Naresdamri Rd.
Nightlife
Hua Hin at night is not as loud and crowded as Pattaya, Phuket and Sami. But there are some of music bars and restaurants for those who want to enjoy the night here.
Most of the resorts and hotels have their own bars and bands to plese their guests. Several British-style pubs and a few sports bars are available for those who like to drink and eat while watching their favourite sport on a wide-screen TV. Soi Bintabat, a lane located near the Hilton Hua Hin Resort is the center of beer bars. This isn't Pattaya or Bangkok, but most of these bars have hostesses who will be willing to share a drink with you.
These places tend to come and go. This is only a short list. There are many more places that you can find by simply wandering about.

Hua Hin Night Market
This is one town that is ruled by its night market. The original is only about 100-150 meters long and is lined with juice makers, fruit vendors, roadside stand-type restaurants with great seafood, lots of interesting things. It is a sort of relaxing just to wander thru the market, take in the sites and sounds, and eat lots.
The night market starts from 6pm and vendors begin packing up just before midnight. Bargaining is quite easy here but even without they are still cheaper than the prices quoted in Bangkok markets.
